HIGH-HEAT-RESISTANT SLOWLY DIGESTIBLE RESISTANT STARCH PREPARED BY MEANS OF CELL WALL CROSSLINKING AND PRODUCTION METHOD THEREFOR
Provided is a method for producing a high-heat-resistant slowly digestible resistant starch prepared by means of cell wall crosslinking, the method comprising: soaking plant tissues rich in starch in an HCl solution, washing the plant tissues to be neutral, adding a NaOH solution thereto for soaking, mashing the plant tissues to prepare a pulp, and adding water thereto and sieving the mixture to obtain coarse granules and coarse pulp of the plant tissues; mashing the obtained coarse granules again to prepare a pulp, adding water thereto and sieving the mixture, collecting obtained coarse granules and coarse pulp, respectively, and collecting the coarse pulp obtained each time; sieving the obtained coarse pulp, collecting residues on a screen mesh, and washing and drying the residues to obtain a whole powder with complete cell walls; dispersing the whole powder in water, and adding a sodium trimetaphosphate/sodium tripolyphosphate compound crosslinking agent thereto, followed by the addition of sodium sulfate; adjusting the pH of the system to 9-12 and incubating the system; and stopping the crosslinking reaction and washing and drying the whole powder. The present invention also relates to a product prepared by means of using the above-mentioned method. The product is rich in the high-heat-resistant slowly digestible resistant starch and has good heat stability.
